Black Pepper Balsamic Strawberries

There’s a natural synergy between the sweetness of strawberries and the warm spicy notes of black pepper. I sometimes serve these with chocolate mousse or vanilla panna cotta, or use them to top a sweet tart case filled with orange cream.

Ingredients

  • 150 g ripe strawberries, hulled and cut crossways into 4 mm-thick slices
  • 40 g caster sugar

Method

  1. Just before you are ready to serve, place the strawberries and caster sugar in a bowl and toss together, then set aside for 5 minutes.
  2. Add the balsamic vinegar and pepper and toss to coat. (Don’t prepare this ahead of time as the strawberries will spoil.) Drain the strawberries before serving.
