  • 65 ml strained fresh pink grapefruit juice
  • 25 ml campari

Method

  1. Heat the grapefruit juice, Campari and sugar syrup in a small heavy-based saucepan over medium heat until the mixture reaches simmering point. Add the softened gelatine and stir until dissolved. Strain through a fine-mesh sieve over a heatproof bowl and leave until completely cool but not set.
