A savoury biscuit that can be broken into pieces and served with fresh dates and a pistachio cream, or a fruit salad of orange, pomegranate seeds, apple and fig. They also make a nice contrast to a watermelon sherbet or gelato.

Ingredients

  • 50 g unsalted butter, chopped and softened
  • 50 g plain flour

Method

  1. Using an electric mixer, beat the butter and flour for 2 minutes or until combined, then add the egg whites and beat until smooth. Cover with plastic film and refrigerate for 1 hour or until firm.
  2. Preheat the oven to 170°C.
  3. Using a palette knife
