A pyramid of pristine perfection, surrounded by tangy candied cumquats and slightly glazed currants, this is a triumph of ethereal textures and flavours. I created this cheese dessert to showcase the creaminess and gentle acidity of two different goat’s cheeses made from the same milk by Holy Goat Cheese in Victoria: fromage blanc and surface-ripened goat’s cheese logs.
