Once you have filled the chocolate balls with the date and espresso caramel, you could roll them in melted chocolate to make truffles and serve as a petit four, or use them to decorate a chocolate-frosted chocolate fudge cake. Or indulge and eat one when you are having an espresso.

Ingredients

  • 100 ml strong espresso coffee, freshly made

Method

  1. Heat a clean and dry heavy-based saucepan over high heat for 1 minute or until hot, then add the caster sugar and cook without stirring for 8–10 minutes or until melted and a dry caramel forms. Carefully add the coffee and cook for 2 minutes. Remove from the heat and stir in the cream until smooth. Pour into a piping bag and tie the end to seal, then refrigerate until requi
