  • 90 g café noir 57% dark chocolate, finely chopped
  • 45 ml hot espresso coffee, freshly made

Method

  1. Place the chocolate in a heatproof bowl over a bain marie, making sure the bowl does not touch the simmering water, then stir until the chocolate has melted. Remove from the heat, then stir in the hot espresso until smooth. Leave to cool for 20 minutes before serving; it should still be pliable when ready to paint onto the plates.
