  • 120 g fondant
  • 80 g liquid glucose
  • 80 g

Method

  1. Heat the fondant and glucose in a small heavy-based saucepan until the mixture registers 170°C on a probe or sugar thermometer; the mixture should be dark-amber in colour. Immediately add the chocolate and stir until melted and smooth.
  2. Spread the chocolate mixture on a silicone mat on a baking tray and leave for 15 minutes or until cooled and hardened.
