  • 25 g unsalted butter
  • 45 g caster sugar

Method

  1. Melt the butter, caster sugar and glucose in a heatproof bowl over a bain marie, ensuring the bowl does not touch the simmering water, then stir to combine.
  2. Sift the flour and cocoa powder together, then stir into the melted butter mixture. Add the crystallised ginger and stir until thoroughly combined. Leave the mixture to cool for 1 hour.
