  • 250 ml pouring (35%) cream
  • zest of 2 oranges, removed in wide strips with a vegetable peeler

Method

  1. Heat the cream and orange zest in a small heavy-based saucepan over low heat until the mixture reaches simmering point. Remove from the heat and leave to infuse for 30 minutes.
  2. Reheat the cream in the pan gently over low heat until it reaches simmering point.
  3. Place the chocolate in a heatproof bowl, then strain the cream mixture through a fine-mesh sieve
