These wafers are quite versatile. Similar to a brandy snap biscuit, they can be used to make a stack with layers of mousse or whipped cream and berries. You could also break them into pieces and stick them out from a cream cheese-based icing on a chocolate cake.

Ingredients

  • 50 g unsalted butter
  • 90 g caster sugar

Method

  1. Melt the butter, caster sugar and glucose in a heatproof bowl over a bain marie, making sure the bowl doesn’t touch the simmering water, stirring to combine.
  2. Sift the flour and cocoa powder together into a heatproof bowl, then pour in the melted butter mixture and stir until thoroughly combined. Set aside to cool a little. Refrigerate in an airtight container unti
