Ingredients

  • 120 g fondant
  • 80 g liquid glucose
  • 80 g

Method

  1. Heat the fondant and glucose in a small heavy-based saucepan without stirring until the mixture registers 170°C on a probe or sugar thermometer; it should be dark amber in colour. Immediately add the chocolate and stir until melted and smooth.
  2. Spread the wafer mixture on a silicone mat on a baking tray, then leave to cool for 15 minutes or until hardened.
