  • 90 g valrhona araguani 72% dark chocolate, finely chopped
  • 70 ml pouring (35%) cream

Method

  1. Place the chocolate in a heatproof bowl.
  2. Heat the cream and cherry juice in a small heavy-based saucepan over medium heat until hot. Pour over the chocolate in the bowl, then stir until the chocolate has melted to form a smooth and shiny ganache. Set aside to cool completely.
