This pastry can hold many different fillings - I often use it to make small petit four-sized tart shells and fill them with salted caramel, then finish with a glaze of chocolate ganache and a sprinkle of vanilla salt. Passionfruit curd or blood orange curd also makes a great filling for a chocolate tart case or you can use a vanilla yoghurt cream and cover the tart with raspberries.
