  • 125 ml water
  • 125 g caster sugar

Method

  1. Heat 75 ml of the water and the caster sugar in a small heavy-based saucepan over medium heat to simmering point. As the sugar syrup just starts to change colour, add the cream, cocoa powder and remaining 50 ml water and stir to combine. Bring to the boil and simmer for 1 minut
