Beetroot, another ‘traditional’ addition to the rainbow array of dishes on offer. This is how I make beetroot salad and it always goes down a treat.
You’ll notice that I don’t boil my beetroot at all. Boiling vegetables robs them of their nutrients and a lot of their natural flavour. Roasted beetroot also doesn’t run on your plate and make everything purple.
