My most favourite bread, ciabatta is awesome for sandwiches, burgers or just pulled apart and enjoyed with soups and stews.
A ‘biga’ is a starter dough. Most classic artisanal bread is made with a biga. It can be fed and grown for decades and decades. As yeast is a living organism, keeping it alive at the right temperature and with the right nutrients is a handy skill. The older the biga, the more complex and interesting its flavours.
