This is one of my all-time favourite dishes to eat. I fine-tuned this recipe while working in the bush. We had a huge variety of game meat and springbok was my favourite as it is not as gamey as kudu or wildebeest. If you can’t find springbok, then lamb will work just as well. Due to the huge difference in the sizes of shanks, I’ve chosen to make this recipe without an ingredients list but rather with a description as to how to go about making the dish.
