The title of the recipe says it all. I made this dish once for a special client of mine and she loved it so much she asked me to make it again for another event.
Umnqgusho is isiXhosa for samp and beans. Overseas samp is more generally referred to as “hominy”. The staple starch of the southern regions of South Africa although these days it is consumed throughout the country. My mom loves making umnqgusho on Sundays, but be warned, a bowlful will have you sleeping the rest of the day
