Ingredients

Starter dough 300 g
Sugar 300 g
Eggs 6
High-gluten flour (gou garn fun) 20 g
Milk powder 230 g
Custard powder 230 g
Alkaline water (garn soei) 35 ml
Baking powder 1 tsp
Butter 115 g, melted
Sweet potatoes 300 g, peeled and grated

Method

  • Combine starter dough, sugar, eggs, high-gluten flour, milk powder and custard powder and mix well. Leave aside for 12 hours.
  • Add alkaline water, baking powder and butter and mix well. Add sweet potatoes and mix well.
  • Pour mixture into a lined 18 x 18-cm baking tin. Steam over rapidly boiling water for 30 minutes. Slice to serve.
