A delicious sprinkle you’ll want to dust over everything. This makes a generous quantity and it keeps for at least a week. The garlicky oil you are left with is delicious for cooking sauces, vegetables or eggs.

  1. Heat the oil in a small pan over a medium heat and add the chopped garlic. Fry until it is very lightly browned; do not allow it to colour too much or burn, as it will taste bitter.
