Kachumber is the closest thing we Indians have to a salad. It’s a messy to-do of tomato, cucumber, onion and coriander. The salt helps the vegetables to release all their delicious flavours into the mix, while the lime juice lifts the whole affair.

Ingredients

  • ¼ red onion
  • 1 large tomato (about 100 g)

Method

  1. Slice the red onion into fine strips. Place in a small bowl and cover with cold water.
  2. Halve the tomato, remove and discard the seeds, then slice the flesh into thin strips and place in a large bowl.
  3. Slice the cucumber in half lengthways and carefully scoop out the seeds, using a teaspoon. Slice the cucumber into thin crescents and add to the tomato.<
