Lassis are the cool, refreshing yoghurt drinks found all over India. Meher Cold Drink House and Parsi Dairy serve the best versions in Bombay.

The quantities below are per person – if you’re making more than one, scale up and blitz together. Lassis are reasonably thick, so it’s best to drink them using a straw.

Ingredients

  • 135 g full-fat Greek yoghurt
  • A large pinch of flaky sea salt
  • A small

Method

  1. Put all the ingredients into a blender, add 65 ml cold water and blitz until light and frothy. If you prefer a cooler drink, pop in a couple of ice cubes before blending.
  2. Pour the lassi into a tall glass, top with a sprig of mint and serve immediately.
