Long before Bombay ballooned into a city of twenty million, the Kolis – a small fishing community – called the original seven swampy islands their home.

Originating from this community, the koliwada recipe involves dipping pieces of fish or seafood into spicy batter and deep-frying them. We use prawns but you can substitute other types of seafood – chunks of tilapia, cod or hake will all work very nicely. Due to the lengthy marinating, the prawns (or other fish) must be very fresh,
