This recipe is a sort of kheer, a traditional Indian dessert, which is like rice pudding (but much nicer). Basmati rice is soaked, blitzed and then cooked in lots of milk until broken down, to create a thick, creamy pudding that sets when cold. A little sugar is caramelised on top to form a crisp crème brûlée-style top, and the blueberry compote adds fruit and extra tartness.
