This is our version of a classic Eton Mess, with the addition of gulkand and rose syrup. We imagine that this is what the well-to-do Memsahibs of Malabar Hill might have made for their fancy parties.

Gulkand is an Indian rose petal jam, apparently good for cooling the body. You can either buy rose syrup or make it at home.

Ingredients

  • 250 g strawberries, hulled
  • 45 g gulkand
  • 35 ml

Method

  1. Blitz 70 g of the strawberries with the gulkand and rose syrup.
  2. Whip the cream in a bowl to soft peaks.
  3. Set aside 1 large or 2 small strawberries for serving. Cut the remaining strawberries into quarters (or smaller pieces if the strawberries are very big
