Great for traveling, perfect for snacks, and packed with protein… what more could you want? These are my go-to snacks for long car trips, plane rides, or even just a quick breakfast on the go. Add a ¼ cup of white chocolate chips for a sweet twist.

Ingredients

  • 1 cup rolled oats (certified gluten-free, if desired), or more if needed
  • ¼ cup flaxseed meal
  • ¼

Method

In a medium bowl, combine the oats, flaxseed meal, pepitas, chia seeds, sunflower seed butter, honey, and vanilla. Stir to combine. I then like to use my hands to mush it all together. If the mixture seems too sticky, add more oats. If it seems too dry, add more sunflower seed butter. Cover the mixture and chill for at least 30 minutes.

Form the chilled mixture into 1- to 1½-inch balls
