Boursin Scalloped Potatoes

Ah, scalloped potatoes. Typically covered in tons of butter, cheese, and cream, it’s the stuff my Christmas dinner dreams are made of. I found that Boursin brand Garlic & Fine Herbs cheese makes it creamy without heavy cream and packs a ton of flavor without resorting to unfriendly aged cheeses.
