Juicy beef and savoury onion soy sauce go absolutely well with fragrant steamed rice. If possible, use wagyu beef, which works best for this dish.

Method

Leave beef at room temperature for 2 hours.
Soak onion slices in water for 15 minutes. Drain and scatter over rice. Set aside.
Prepare sauce. Heat onion, koikuchi soy sauce, mirin, sake, grated apple and sugar in a pot. Bring to a boil. Lower heat and simmer for 10 minutes until the liquid is reduced by half. Add butter, grain vinegar and pepper. Season
