Juicy beef and savoury onion soy sauce go absolutely well with fragrant steamed rice. If possible, use wagyu beef, which works best for this dish.

Ingredients

  • Beef steak 2 slices, can be 100–200 g (3½–7 oz) each

Method

  1. Leave beef at room temperature for 2 hours.
  2. Soak onion slices in water for 15 minutes. Drain and scatter over rice. Set aside.
  3. Prepare sauce. Heat onion, koikuchi soy sauce, mirin, sake, grated apple and sugar in a pot. Bring to a boil. Lower heat and simmer for 10 minutes until the liquid is reduced by half. Add butter, grain vinegar and pepper. Season
