If you cannot find Granny Smiths, choose another tart-sweet, firm apple, such as Pippin, Rome Beauty, or Jonagold for these fruity fritters. If pressed for time, skip the glaze and sprinkle with confectioners’ sugar.

Ingredients

  • 1 recipe Basic Yeast Doughnuts
  • 2 apples, preferably Granny Smith, peeled, cored, and cut into ¼-inch dice

Method

Make the yeast doughnut dough and let rise until doubled in size, about 1 hour. Meanwhile, in a saucepan, combine the apples, lemon juice, butter, cinnamon, and a pinch of salt over medium-high heat and cook, stirring occasionally, until the apples are tender, about 5 minutes. Remove from the heat and stir in the cornstarch. Refrigerate until cool.
