Ingredients: 1 shallot, minced; 1 cup (240 ml) port, claret, or other full-bodied wine; pinch of ground cloves; 1 tablespoon water; ¼ teaspoon black pepper; 2 whole trout, gutted and prepared for cooking, or 4 trout fillets; 2 anchovy fillets in olive oil, finely chopped; pinch of salt; 1 cup (240 ml) chicken stock; 1½ teaspoons mushroom ketchup or Worcestershire sauce; ¼ teaspoon ground allspice; 2 teaspoons cornstarch; 1 teaspoon fresh lemon juice
