Duck with Apples and Calvados

Another of the dishes planned for at Edith’s hastily canceled wedding breakfast in season 3, this is a rich and satisfying way to serve duck. The bird was popular at country houses, often served as a result of a good day’s shooting, and takes flavor very well. Although this recipe is best with duck, you can also use it with other game birds, as well as with rabbit, squirrel, venison, and, more prosaically, pork.
