Shooting is a large part of life at Downton Abbey, and wild game would have been served on the dinner table at most country houses. It was often simply roasted and served with gravy or a suitable sauce, but when a large amount was bagged, the kitchen had to be creative with ways to cook it that would not result in guests becoming bored. Popular at the time, this French-influenced dish works with any dark meat.
