Bread sauce was the usual accompaniment to roast chicken in the Downton Abbey era. Done badly, it’s like eating wallpaper paste. Done well, it is very satisfying and rich, though certainly not as sophisticated as a fancy French jus.

Ingredients

  • 1 cup (40 g) good-quality dense white bread, cut into 1-inch (2.5-cm) cubes
  • Boiling water, to cover

Method

Put the bread in a heatproof bowl and pour in boiling water to cover. Let soak for 5–10 minutes. Remove the bread and gently squeeze out as much of the moisture as you can.
