Another firm favorite for the sweet course at Downton is meringue with fruit, generally raspberries. It’s served instead of the desired apple charlotte when Mrs. Patmore refuses to change her menu in season 1, and it’s on the table when Robert first starts to fall for Jane Moorsum, a housemaid, in season 2. It’s a fairly simple recipe, ideal for country house kitchens, as its various components can be made in advance and the dish plated up with a flourish as required. Filled meringues of this type were also sometimes called pavlovas, after the Russian ballerina Anna Pavlova, who toured New Zealand and Australia in the 1920s and, like Dame Nellie Melba, gave her name to a delicious dessert.
