A fixture at fairs, fetes, and festivities of all kinds, jam tarts and custard tarts appear at the Carson-Hughes wedding, as well as at the countless village events of Downton Abbey. Jam tarts are possibly the easiest thing anyone can make, and in a house like Downton, they were very useful for using up nub ends of pastry from other dishes. Custard tarts remain one of the traditional offerings at old-fashioned bakeries. Here, the two fillings are combined, a trick of the day. Slightly more decadent than just jam or custard, it’s the kind of thing that upper servants would have eaten, while those below them made do with the simple versions.
