The Vietnamese soup pho—pronounced like “foot” without the t—is as much a ritual as it is a meal. In most versions, a broth is made and seasoned, usually with cloves, cinnamon, star anise, and ginger, then various condiments are added to the soup before serving, or they are passed at the table for guests to help themselves. Since pho means “noodle,” by definition the soup must always contain them, but the rest of the ingredients are limited only by your imagination and what yo
