Chicken broth is useful if you’re making a base for a duck sauce but don’t have any duck parts except the breasts. You can also use chicken broth to moisten duck parts to make duck broth that is half as concentrated as the concentrated broth described. This chicken broth is already very concentrated, flavorful, and almost as clear as consommé (clarified broth).
