Not really a gratin, since it doesn’t include cheese, but potatoes baked in a shallow dish in this way were used to partner grilles and roasts almost every day when I was at the Eagle. Endless fun can be had with the flavours added to the potatoes. Use any waxy potato varieties; floury baking potatoes will collapse into a mush. The Cyprus Nicola potato is the ideal but Maris Piper is a good second choice.
