This salad was suggested by Jeff Dawson, a renowned gardener I’ve had the pleasure to work with over the years. It’s a simple approach that can be used for any variety of meaty greens. Grilling gives a special smoky flavor, which is heightened by the nutty sherry vinegar. You may not find Lacinato kale in your supermarket, but it is a great variety to track down at the farmers’ market or grow in your garden.
