This refreshing salad shines during the summer, when tomatoes are at their peak. Toybox tomatoes are baby red, orange, and yellow tomatoes that have become widely available. (Regular cherry tomatoes will certainly do in their place.) This salad is great for making ahead, since the flavors develop best after about 2 hours in the refrigerator. The combination of cucumbers and yogurt is derived from Indian cuisine, where raita is used as a condiment to calm the palate alongside hot curries.
