This is a simple salad with really punchy flavors to it. It would be a perfect accompaniment to simply grilled chicken or pork.
Cut the romaine hearts crosswise into thick sections. In a large bowl, toss the romaine with the tomatoes, pecans, and Blue Cheese and Mint Vinaigrette. Garnish with mint sprigs and blue cheese, if using.
