This main-course salad has been a personal favorite for a long time. I particularly like the quality of roasted beets, as the natural sugars of the beets intensify during the roasting process. This salad is vividly red and green, a stunning visual statement as well. The marinade is delicious on a wide range of meat and poultry, but for the flavor to develop here, the pork needs to be marinated for at least 4 hours, so plan ahead.
