This is a rich stew that is a meal in a bowl, particularly when accompanied by crusty French bread. In this recipe we’ve made the presentation a little more elegant by straining out the cooking vegetables and adding separately cooked potatoes and cabbage at the end to give more color and texture. I recommend making the soup a day ahead and refrigerating it overnight: This makes it easier to remove the fat layer and you can then prepare the beets, potatoes, and cabbage just before you reheat
