Here’s a simple dish that takes advantage of ripe tomatoes from your garden or the farmers’ market. This is also a chance to experiment with other fresh herbs like chervil or tarragon in place of or in combination with, the parsley. You could shave a little salty cheese like pecorino as a garnish if you wanted, but I think I like it best without cheese.
