Dressing

  • ¼ cup dashi or fat-free chicken stock
  • ¼ cup soy sauce

Method

To make the dressing: In a small bowl, combine the dashi, soy sauce, vinegar, sugar, and sesame oil.

To make the salad: In a large pot, bring 2 quarts lightly salted water to a boil over high heat. Separate the noodles and drop them into the boiling water, stirring once or twice. When the water begins to boil, add 1 cup cold water. Repeat this procedure twice, cooking until the noodles
