Peppers, tomatoes, chiles, and of course “mother corn” were all part of the New World pantry. I’ve called for shrimp here, but you could use any fresh shellfish of your choice, such as scallops, oysters, or mussels. Make sure the container you serve the cocktail in is clear glass so you can see all the colors of the food. I love to do this in a large martini or margarita glass.
