  • 12 ounces ripe tomatoes, seeded and diced

Method

In a medium bowl, combine the tomatoes, red onion, olive oil, chile, cilantro, mint (if using), lime juice, and sugar. Season to taste with salt and pepper. Allow the flavors to blend for at least 1 hour before using. Store, covered, in the refrigerator up to 2 days.
