Ingredients

  • 1 tablespoon pure chile powder, such as ancho
  • 1 teaspoon fennel seeds

Method

In a spice grinder, combine the chile powder, fennel seeds, coriander seeds, salt, oregano, and cinnamon and finely grind. Alternatively, grind by hand with a mortar and pestle. Transfer to a medium bowl and stir in the olive oil to make a smooth mixture. Store, covered, at room temperature for up to 3 days.
