In a blender or food processor, combine the egg, garlic, green onion, chipotle, and lime juice and blend or process briefly. With the motor running, slowly add the olive oil to form a thick emulsion. Season to taste with salt and pepper. Store, covered, in the refrigerator for up to 5 days.
