This standard of Chinese cooking is a blend of five different aromatic spices. The choice of ingredients varies depending on the maker. Sometimes licorice root is substituted for the fennel or anise. Five-spice powder can be purchased ready-mixed, but like all ground spices it quickly loses its flavor, and I think it’s best to make your own from spices that are freshly ground.
